Kefir or kephir (/kəˈfɪər/ kə-FEER), is a fermented milk drink similar to a thin yogurt that is made from kefir grains, a specific type of mesophilic symbiotic culture. The drink originated in the North Caucasus, in particular the Elbrus environs along the upper Kuban river region of Karachay and Balkaria from where it came to Russia, and from there it spread to Europe and the United States, where it is prepared by inoculating cow, goat, or sheep milk with kefir grains.

- You can easily make MILK KEFIR utilizing this culture starter. Feed these MILK KEFIR GRAINS with cow’s milk, goat’s milk, or sheep’s milk (either pasteurized or raw) to make you kefir yogurt (aka ‘kefired’ milk).

Reviving your ‘milk kefir grains’.
As soon as you receive your ‘milk kefir grains’:
1. Put your ‘milk kefir grains’ in a jar with fresh [whole] milk.
NOTE: we recommend 8 ounces of milk for each ounce of grains.
2. Let them rest for 24 hours.
3. Strain the milk & recover the grains.
4. You may need to discard the first one or two batches of ‘kefired milk’.
Making ‘kefired milk’.
1. Place your ‘milk kefir grains’ in a glass jar.
2. Add fresh [whole] milk to the jar.
NOTE: we recommend 8 ounces of milk for each ounce of grains.
3. Let your ‘milk kefir grains’ rest for 24 – 48 hours.
4. Strain the milk & recover your ‘milk kefir grains’.
5. Enjoy ‘kefired milk’ by itself or with fruit.
6. Repeat these steps.
